The only teams that could possibly stand up to 10 Jedi Knights consistently are 10 Wickets and 10 Greedos(series IV)
Even those are debatable.

But if a figure dies, he is defeated. So without a black window, he woudl go to the defeated pile even before the attacker can pick the order of Special. I think this is the crux of the question: Do you get to look at the windows before or after they go into the "defeated pile"? Well, in some cases, I think one could easily determine the order of defeat (see superflytnt's gold Nute example). In other cases, you could always say that the figure with the greatest proportion of striking surface devoted to it was defeated first. Oh, and I'd argue that even 10 S4 Greedos wouldn't be able to beat a team of 10 Jedi Knights. Though they have a higher probability Shootback, they'd still then take out two figures per attack + special power combo at once. 10 Wickets, on the other hand, have demonstrated themselves to acquit themselves very well against 10 Jedi Knights. In particular, the only game I've played with these two teams ended up with the Ewoks having 2 figures vs. 1 Jedi Knight (and the second Ewok was about to knock down the last Jedi Knight) when the second-to-last Jedi Knight's special power window came up white, allowing the last Jedi Knight to knock down both Ewoks.

Here's another perspective that we may consider. All of the figures were attacked at the same time. So perhaps, all of the figures go to the defeated pile at the same time, regardless of what abilities are taking place. This then begs the question, "if an ability returns a defeated figure to play, does it matter if that figure was in the defeated pile or just recently defeated and not yet in the pile?". This is fun...wait I'm having a flashback...If one of your opponents Battle ravages, which is being possessed by the Emperor, is hit so hard that it lands in your defeated pile, can you then use one of your own recently defeated Battle Ravages abilities to put your opponents possessed Battle Ravage into play under your control, before the Yoda that was also being attacked ability takes place? Naw, I'm just messing around. But in all seriousness, the more sets that come out, more complicated scenarios will come up.

Here's an idea, how about three genral Grievous and a GBG against the knights. It seems to me that the GG's could dance out of the way of the jedi knights longe enough to take most of them down.

No way. I think the only team even CLOSE to beating JKs would be 10 Wickets.

I doubt it'd work that well. The 30-point Grievouses can only move 6, so they'd be unable to dodge an onslaught of the Jedi Knights. Even if we're talking about the S2 Grievous shooter, his special power only activates 31% of the time, so more likely than not, when he's down, he's down. The GBG is a relatively weak striker, so I'd just let it work its way up to the Jedi Knights and cut it down at my leisure. Even if you load up on 5 Striker Grievouses, you've gotta remember that to attack a Jedi Knight, Striker Grievous has to approach it, thus putting it in range of other Jedi Knights, ready and willing to avenge the fallen Knight(s). However, the Vengeance power of Striker Grievous might come in handy there...hmm...now I wish I had more Striker Grievouses to try this out with
