I was sitting back thinking of Obi-Wan aging.. anakin aging.. padme aging.. they all age a bit via movie magic.. but Mace Windu from episode I to episode III looks the same.. EXACTLY the same.. is this something anyone else caught.. am I miss something?.. oh by the way.. what happened to Yaddle?

That's not a plot hole, more like nit-picking.
Mace aged natrually for the 9 years it took Sam Jackson to make the movies. He didn't have any hair for the make-up people to grey, nor was is important, in any way, for his character to age.
Padme aged because Natalie grew up, no movie magic. Anakin grew up because he was played by a child in #1 and Hayden naturally aged between #2 & #3, no movie magic. And Obi Wan aged because Ewen (sp?) aged naturally over the 9 years making the movies, plus he was given a little grey hair to match Obi Wan in #4. Here a 'little bit' of movie magic was used.
And Yaddle... who knows? There were jedi from #1, other than her, that weren't in #2 or #3. There were jedi from #2 that weren't in #3. Jedi come and go, they are busy folk.

well the jedi not in 3 that were in 2 u can pretty much assume they were killed in the arena

It's never safe to assume anything (just like the saying goes), but in this case...
Out of the thousand(s) of Jedi only 200 went to the arena in Ep. 2. Of the Jedi in Ep.2 (including arena survivors) not in Ep.3 (from the starwars.com databank)...
